Katie Boardman, the owner of the new Lebanon-based baking establishment Katie's Cookies, has been serving up sweet treats to Upper Valley locals since March. The shop, which sells a mix of traditional and specialty cookies on a rotating menu, has already gathered a loyal customer base that continues to grow. To find out more about Katie’s Cookies, read our short Q&A with Katie below:

Q: How did Katie's Cookies begin? (When did you first open, has Katie's Cookies been around before, where did the idea come from, why are you doing it, etc.)

A: We opened in March of 2023. I have always signed up to bring cookies to school, sporting, and church events. We've moved back and forth across the country several times. Wherever we've gone, I've been known for making cookies. I always said I'd open a shop when my kids were all in school. My husband saw the space available and with my youngest in first grade at the time, we decided to take the leap.

 

Q: Where is Katie's Cookies located?

A: 2 West Park Street #104 in Lebanon, New Hampshire. We have fabulous neighbors, all with delicious food! You can find me surrounded by Salt hill Pub, Three Tomatoes, and Lalo's Taqueria.

 

Q: When are you open?

A: Tuesday through Saturday, 12 to 6 pm.

 

Q: What kinds of products do you offer?

A: Each day has a different menu of cookies. The only cookie you'll find every day is Katie's Chocolate Chip. Each day you can count on a chocolate-based cookie, a fruity cookie, and a couple of traditional flavors like peanut butter and snickerdoodles. Each week you'll also find a cookie of the week that is not on our normal menu.

 

Q: What's the most popular cookie on your menu?

A: Katie's Chocolate Chip is by far our best seller. The only cookie to ever outsell it on one day was Peanut Butter Fluff—our take on a New England favorite, the Fluffernutter sandwich.

 

Q: What's your favorite thing to bake and why?

A: Chocolate chip cookies are my favorite to bake and eat. I worked on my recipe for many years and I'm really proud of it.

 

Q: Do you do special orders? Delivery?

A: Yes! If you want cookies off the daily menu, there is no minimum amount and you can call the day before or even the day of. If you want a specific cookie not on the day's menu, there is a minimum of 18. We also do giant cookie cakes for birthdays and celebrations. Grubhub delivery is coming soon.

 

Q: How much do your cookies cost?

A: $3.25 per cookie. If you order a dozen, the price drops to $3 per cookie.

Q: How do you come up with your recipes? How often does the menu change?

A: Many are inspired by classic desserts like banana cream pie and German chocolate cake. Some just come to me at random times. I'm always thinking about new cookie flavors and combinations. I also have a great baking teammate named Beth, who has great ideas. Our menu changes every couple of months. We will be changing again in August.

 

Q: Is there anything else you want people to know?

A: Opening this shop has been a dream come true. I'm so happy to have a shop where all are welcome! I hope people will feel at home when they are with us.
