In March, Seth and Dashia Cox jumped on the opportunity to purchase Soulfully Good Cafe in Woodstock, which they now own and operate with the help of their son, Hunter. The Cox family moved to Woodstock from East Georgia, where they had previously worked in cafe-style environments and enjoyed the community found in serving customers daily and running a small restaurant business.

Soulfully Good Cafe serves up a variety of chef-made breakfast, lunch, and Sunday brunch items throughout the week. Read on to get to know the new owners and find out what’s going on at Soulfully Good Cafe.

Q: For those who haven't been, how would you describe Soulfully Good Café?

A: We want the cafe to be an inviting and friendly place. We want everyone to feel welcome and enjoy the experience.

Q: What's on the menu at Soulfully Good Café?

A: Our menu is made up of primarily paninis and salads. I like to describe them as high-end paninis and salads. Chef Matt puts a lot of thought and attention into each meal.

Q: What is your most popular menu item?

A: For our breakfast it would definitely be “The Local,” which is two eggs, bacon, and cheese on a freshly baked croissant. Lunch would be the chicken provolone panini.

Q: What is your favorite menu item and why?

A: Dashia's is the veggie wrap. It is the perfect blend of hummus and veggies. Seth's is the pulled pork panini. The pork is seasoned and the house-made barbecue sauce is perfect.

Q: Where is Soulfully Good Café located?

A: We are located at 67 Central Street in Woodstock, Vermont, directly across from the Bar Harbor Bank.

Q: When are you open?

A: Our kitchen is open Wednesday through Saturday from 8 am to 3 pm and Sunday from 9 am until 1:30 pm. From July until October, we are going to do an evening service on Friday and Saturday from 5 to 8 pm. Once the kitchen closes, we sell coffee and pastries for 30 more minutes.

Q: Where do you get your recipes from?

A: Our chef comes up with the food and he is great.

Q: What do you love about Soulfully Good Café?

A: I love that we get to meet new people from all over on a daily basis. We like to think that our kindness and great food can help people to have a better day.

Q: What are some of the challenges of running a restaurant?

A: I believe the hardest part of this business is not knowing how to plan. You want to have enough fresh items while also limiting waste by the end of the day.
